The Origin of La Finojosa

Hams and Sausages La Finojosa is a family business, rooted in the north of the province of Córdoba, in the heart of the Pedroches Valley. Our tradition, climate and incomparable environment have made it possible for the best raw materials to reach your table converted into PURE BREED DELICATES.

From native Iberian breeds, fed with the best acorns from the Cordoban oak forests, we select the meats with which we make our Hams, Shoulders and Sausages in an artisanal way, following the ancient tradition of the Region.

For the process, we rely on the most advanced techniques. Once in the drying room, the natural climate of the area, of cold, dry winters and hot summers, is responsible for giving the products the right level of curing.

The Pasture of Los Pedroches

Los Pedroches, a Cordoba region located in the north of the province, has an area of 3,685 km. squares. It constitutes one of the three units into which Sierra Morena is divided, bordering to the north with Extremadura and Castilla-La Mancha. It is, without a doubt, one of the most attractive corners of the province and the ideal natural environment for raising the Iberian pig.

The Valley of the Pedroches perfectly defines what the Arabs called Fhas al-Ballut or Valley of the Acorns. In it, cereal cultivation alternates with livestock use of pastures, maintaining an adequate balance between ecological conservation and resource exploitation. The Iberian pig is located there, an example of the most efficient and traditional use of the pasture.

With the effort and determination of many hundreds of years, farmers and ranchers have worked for the conservation of the unparalleled habitat that gives life and shelter to the most select and noble livestock of this land, the IBERIAN PIG.

The Valley of the Pedroches forms one of the most important pastures in Europe. Here, herds of native pigs grow every year, responsible for the best meats and fats with which our extensive catalog is made. The natural food offered by the environment, composed of acorns, fresh herbs and grasses and the freedom with which the animals coexist on the farms, give birth to a Denomination of Origin without equal.
