The Origin of La Finojosa

Jamones y Embutidos La Finojosa is a well-established family business located in the northern area of Córdoba province, right in the heart of Los Pedroches Valley. Our tradition, climate and unparalleled natural environment have made it possible for the best raw materials to reach your table in the shape of PURE BREED DELICACIES.

We select the meats for our cured hams, shoulders and cold cuts from indigenous breeds of Iberian pigs that feed on the best acorns that Cordoba’s evergreen oak groves have to offer, and we produce them following the millenary tradition of the region.

For the production process we use cutting-edge techniques, and once our products reach the drying areas, the natural climate of the region, with its cold, dry winters and hot summers, ensures that they are cured to perfection.

Dehesa de Los Pedroches

Los Pedroches is a region located in the north of Córdoba province with an area of 3,685 square kilometres. It is one of the three sectors that make up Sierra Morena, bordering Extremadura and Castilla-La Mancha on the North. It is, without a doubt, one of the most beautiful corners of Córdoba, as well as the perfect natural environment for raising Iberian pigs.

Los Pedroches Valley perfectly defines what the Arabs called Fhas al-Ballut or Valley of Acorns. The area alternates cereal farming with the use of pastures for livestock purposes, thus preserving a perfect balance between environmental conservation and resource exploitation, and it is home to the Iberian pig, a prime example of the dehesa’s most efficient and traditional means of exploitation.

Every year, we raise the herds of indigenous pigs responsible for the first-class meats and fats used in our wide selection of products.
